Revolutionizing Mexican Cuisine with Exquisite Wine Pairings and Craft Cocktails

This renowned restaurant, spearheaded by two visionary head chefs, Rico Torres and Diego Galicia, has captured the essence of Mexican cuisine, presenting it in ways that honor its rich history while pushing the envelope of contemporary culinary art.

The chefs behind Mixtli believe in the power of collaboration. “If you want to go fast, go alone. If you want to go far, go together,” they emphasize. This philosophy is the backbone of their partnership, propelling them forward in their culinary journey. That collaboration would not be possible without the energy of the team that follows them. Hailey Pruitt and Lauren Beckman are vital parts of the Mixtli team.

The Mixtli experience is not just about the delicious food, it is also about the drinks. Beckham and Pruitt are the masterminds behind the tasteful drinks that compliment the food on the plates. While many people might self-identify as “wine connoisseurs,” Pruitt is the true embodiment of the phrase as she serves Mixtli as the “Certified Sommelier,” which is defined as someone who has passed the Court of Master Sommeliers Certified Sommelier Examination.

When dining at Mixtli, you have the option to enjoy wine pairings with each course of your meal. Much like the kitchen, the wine list changes every 45 days. Originally, the only way you could enjoy wine from Mixtli was through dinner, now it has evolved.

Mixtli has an in-house wine cellar that is adjacent from the dining room. The cellar holds more than 1,200 wines from around the world. Pruitt curates all of this space and makes sure to pay special homage to Mexican culture. A new addition to the cellar is the “Cellar Wine Club,” which features specially curated selections available for monthly pickup. To learn more about pricing, click HERE.

Tucked away at the back of the restaurant is where Beckman’s magic takes place; the bar. Surrounded by colorful clouds that represent Mixtli’s overall mission, the bar serves as an epic spot for socializing, drinking, and admiring. The Bar at Mixtli offers a variety of beverage options including cocktails, agave spirits, and a progressive wine list.

As bar director, Beckman’s job is to craft creative cocktails and make visitors feel welcome. Unlike the dining hall, no reservations are needed to enjoy the bar and the wonderful customer service that comes with it.

Mixtli is a place where tradition meets innovation, and passion drives progress, especially in the cellar and bar. The restaurant stands as a testament to the rich tapestry of Mexican cuisine, inviting guests to embark on a culinary journey that spans time and taste.
