The chefs view Mexican cuisine not as a static collection of recipes but as a living, breathing tradition that grows and adapts every day. “New chefs in Mexico are making it happen, there’s new indigenous research every single day,” they explain, highlighting the continuous innovation in Mexican culinary arts.

The Down Market was given exclusive access to the behind-the-scenes of what it takes to create a brand new menu. From research to official tastings, Mixtli proved to be very thorough in their craft. For this particular project, the chef’s were focused on finalizing their “Tierra Caliente: Guerrero x Michoacán” menu.

Interestingly, Mixtli’s journey began with a focus on modern techniques and theatrical presentations. However, as the chefs delved deeper, they found greater joy in exploring ancient cooking methods. This shift led them to study the culinary practices of various indigenous groups, from the Aztecs to the Apache, incorporating traditional utensils and ingredients into their modern kitchen.

Research plays a crucial role at Mixtli. The chefs draw from various sources, including the extensive Mexican cookbook collection at the UTSA Library, which dates back to 1789. This treasure trove of knowledge helps them stay true to their mission of preserving and promoting traditional Mexican cooking techniques.

Mixtli is more than just a restaurant; it’s a creative hub. It attracts artists, historians, and forward-thinkers who share a passion for Mexican cuisine.
